Mango & Coconut Clear Whey Pudding

The perfect post-barbeque palate cleanser.

You’ve got your pals round for a barbeque. The sun’s shining. Your mate has just said: “It’s hot, might be too hot”, so you know it’s a proper British summer. You’re all full up on burgers, sausages, and potato salad, but it’s time for dessert. Everyone groans that they’re full, but they all change their minds when they find out what’s on offer. They are devoured. Everyone is instantly refreshed. They ask how you came up with it. You say: “it’s a @healthy_floflo special”.

Method

  1. First, in a bowl add the mango pulp and Clear Whey.

  2. Blitz with a handheld blender until it’s completely smooth.

  3. Grab a pan and add milk and a sachet of gelatine, and wait a few minutes for the gelatine to “bloom” (ie do its thing).

  4. Put on the hob over a low temperature and mix until the gelatine is completely dissolved.

  5. Add the protein powder and mango pulp mix to the pan and stir well.

  6. Then line six silicone cupcake moulds onto a tray and pour in the mix.

  7. Allow to set in the fridge for four hours.
